Roger Debono has been Hotel Calypso's Head Chef for the past five years:
“Great attention to detail is paid to every morsel at Calypso, we believe food is an art to be enjoyed. Apart from pleasant on the palate we hope to make our food pleasant on the eye too, it’s a holistic approach."
“We’re proud to be Gozitan and consistently use local produce as I’m a great believer in exploiting it. We love to use the freshest seasonal ingredients to create a healthy balance and our food is largely Mediterranean with some flavoursome touches from overseas."
“La Perla is our centre and we take pleasure in creating exciting menus that vary extensively from day to day. We’re happy to listen and understand that everybody is after something different, we’re happy to cater for you whether you’re a meat-lover or vegetarian. Our Sunday Buffet is a sight to behold with dishes to suit every palate, in winter we offer an extensive carvery while in summer we relocate to the terrace for a tasty alfresco BBQ."
